Fish skin contains collagen and snacks, a protein that is used in, for example, cosmetics to increase skin elasticity and hydration. Collagen can also be turned into gelatine which is utilised in foodstuffs. Moreover, fish skin contains many minerals such as protein, unsaturated fatty acids, sulfur, choline, lecithin and calcium.
Choline enhances memory. Lecithin can protect the liver, promote the nervous system and develop the brain.
Unsaturated fatty acids are used mainly to prevent and treat atherosclerosis, high cholesterol, high blood pressure and cardiovascular disease.
